Dory with olives and potatoes

Ingredients
|
|
1 big dory (around 1.5 kilos),
500 gr.
potatoes,
100 gr. black olives (preferably ligurian),
olive oil,
2 cups
dry white wine,
a few bay leaves,
salt.

Preparation
|
|
How to make the dory with olives and potatoes:
Scale and clean out the fish's interiors; dry and arrange it on a layer of
bay leaves already placed on the bottom of the baking dish with a little
olive oil. Peel potatoes and cut into thin slices and arrange them around
fish. Add salt and pepper and olive oil, on both the fish and potatoes.
Bake the dory
for around 10-15 min. at 220°; remove pan from oven, sprinkle with
white wine and add olives. Bake the dory
again for another 10-12 min.
