3 spring kid heads
2 oz. pancetta
3 cloves garlic
6 sprigs rosemary
6 tbs. white breadcrumbs
1 cup white wine
1/2 cup olive oil
How to make the TESTINA DI CAPRETTO AL FORNO:
Clean and split the spring kids’ heads. Remove any visible cartilage. Prepare a battuto with pancetta, garlic, rosemary, breadcrumbs, salt and pepper. Spread this mixture over the heads, pressing lightly so the mixture adheres tightly and covering the brain portion with aluminum foil so it does not burn while cooking. Grease a baking pan and bake in the oven at 475°F for 2 hours, basting occasionally with white wine.
